I feel so domesticated recently. I had a lot of random leftovers and managed to take them and turn them into this taco casserole. It tasted so good. I know that’s silly to get excited over but I don’t remember having casseroles growing up (despite my mom saying we had them) so I get excited when I make one. It seems like such a newlywed thing to do. Yes, I still claim that right.
I don’t have a recipe to share but I pretty much just put rice, taco meat, beans, corn, tomato sauce, and spices together. Layered the top with cheese then put the cornbread dough on top. I wasn’t sure how the cornbread part would work but I loved it! It tasted so good.

casseroles never really look amazing, but they usually taste pretty great, and this one even looks tasty!
