Now I know that 24 IS not that old but we both feel like it is. For years you look forward to the time your finally in your 20s. Now I’m here and I feel like it is going to go by too fast. At the same time, we are grownups now and we have to pay bills and actually worry about what we spend our money on. I love my life but I do kind of miss the carefree days when we didn’t have to worry about what we spent our money on (Or worry about saving up for future babies).

Anyways, Nick has started this thing about coming up with lavish cake ideas and suggesting them to me in hopes that I will actually attempt them. It started as a joke last year when he said he wanted a ten layer cake which to his surprise I made kind of. It ended up being eight layers – two fell apart in the stacking process due to my not letting them cool very long. Got to love my decorating skills as well. That cake was yummy and took a ton of people to eat. We even took it to Nick’s work to see if they could eat any of it.
This year Nick decided he wanted an ice cream cake. I had no clue how to do that and told him it wasn’t likely. But he started giving me ideas of how to do it, so I borrowed some a spring loading pan from a friend and went from there. I will say that if I had to make it again I would change a few things but with limited baking supplies and lack of knowledge I think it turned out pretty well. It liked to melt fast though so we had to move fast with it at all times which is why the frosting turned out funny.
I made homemade vanilla ice cream with Twix for this cake and I knew I would have a ton of ice cream so I also made ice cream cupcakes. It was fun- I made cupcakes then cut out the centers (and ate them ). Then scooped a little bit of ice cream into each one. Homemade ice cream is runnier at first so it makes it easier. Then I put the tops back on and froze them immediately. I then piped frosting onto them but didn’t get a picture. I loved them more than the cake and highly recommend them. Great for kids.
Yea for the Langford children! Left to right Shea, Sebra and Seth. We love this family and are basically their adopted children. They had as over for dinner (like every other Sunday) and ate cake with us.
